Our Story
Hart’s Desire Oysters is run out of my Great Grandfather Issac Campbell Harvey's former Lobster Pound in South Bristol, Maine. Issac immigrated from Quody Head, Nova Scotia in the early 1900s and built a successful lobster wholesaling business along the Maine coast. My wife Sarah and I were very fortunate to buy back the property in 2022.
Oyster farming requires working outside in a beautiful environment and the rewards are very tangible. Oyster farming is also physically challenging, and there is always something that needs to be done. Much of what has been accomplished is due to the support of Sea Grant Maine, the Maine Aquaculture Association, the Maine Aquaculture Innovation Center and the University of Maine Darling Center.
What makes us different?
Our oysters are raised from spat in the cold and refreshing water of midcost Maine. I have sampled oysters from Maine to China and Maine wins!
We are a small and dedicated team and we care about what you think. We care about getting it right every time. We are also driven by the fact that previous generations of our family were successful fishermen and we are excited to uphold that family tradition.
